Pablo Fallabrino, Alcyone NV (50cl)

Pablo Fallabrino is a laid-back, good-natured Uruguayan surfer turned winemaker; his winery is located where the River Plate, the widest river in the world, meets the Atlantic Ocean. Pablo's approach is not to overthink the winemaking process; instead, he runs with his instincts, takes chances and makes extraordinary wines with his own personal signature. Alcyone NV is a stunning dessert wine made from 100% Tannat. Stylistically, it sits somewhere between a Barolo Chinato (a dry wine with added aromatics) and Marsala (a fortified sweet wine). It has a nose of blossom, vanilla bean, coffee, honey and black cherry; the palate is super rich, smooth and elegant, with an almost never-ending finish. Such an interesting wine and one best paired with chocolate-based desserts.
